The Japanese Nutrition Improvement Law prescribes the display of calories, protein, and sodium content in nutritional components in processed foods sold to general consumers. Flame atomic absorption spectrometry is the method adopted for the analysis of sodium content.

Atomic Absorption Spectrophotometer

Toxic metals (arsenic, lead, cadmium, etc.) in foods must be controlled down to low concentration levels. Furnace atomic absorption spectrophotometry can measure these elements down to ppb trace levels. This technique also allows direct analysis of liquid foods without pretreatment.
