Analysis of Diacetyl and 2,3-pentanedione in Beer Using Nexis™ GC-2030

Off-flavor beers include diacetyl and 2,3-pentanedione (collectively vicinal diketone: VDK). VDKs are produced in the fermentation process, and when they are present in a certain concentration, the aroma called butter-scotch sticks to beer. Therefore, it is important to control the flavor of the beer without affecting it. In this application news, we confirmed the quantitation of VDKs for two types of commercial beers and the change in VDKs during the aging process.
