Quantitative analysis of illegal dyes in eggs using LC/MS/MS

Various synthetic dyes for coloring eggs as food additives were determined by a liquid chromatograph mass spectrometer, LCMS-8040 in commercial egg samples. Major dyes such as Sudan I, II, III, IV in addition to Para Red were pre-treated by QuEChERS with solid phase extraction followed by a reversed-phase separation and an LC/MS/MS analysis. All target compound was determined in the range from 1 to 20 or 100 ng/mL with good linearity (contribution: 0.993 or greater), recovery (90 to 110 %) and reproducibility (approximately 5 %RSD).
