Monitoring Organic Acids during Fermentation with Shim-pack™ Fast-OA High-Speed Organic Acid Analytical Column

Organic acids are analyzed in various fields not only as ingredients of taste and aroma of food but also as raw materials of pharmaceutical products and chemical products. For example, high-speed organic acid analysis is required to monitor fermentation conditions, and growth conditions must be controlled according to the life cycle of microorganisms.
As an example of high-speed analysis of organic acids by HPLC, we introduce a combination of an ion-exclusion column, Shim-pack Fast-OA, and pH-buffered conductivity detection method.
