Determination of Alliin in Garlic

Alliin is an amino acid and can be analyzed using OPA(o-phthalaldehyde) as the reaction reagent with thepost-column fluorescent derivitization method.Introduced here is an analysis of alliin in garlic usingthe Shimadzu amino acid analysis system.
