Food Metabolomics Analysis of Deterioration Characteristics of Alcoholic Drinks Using LC/MS/MS

As an example of food metabolomics in recent years, hydrophilic components in sake and white wine exposed to multiple storage conditions were comprehensively analyzed by a high-performance liquid chromatograph mass spectrometer (LC/MS/MS), and the variations in these storage conditions were verified. The combination of LCMS -8060 and statistical analysis provided insights into the impact of the environment on quality during storage and transportation of alcoholic beverages.
