Abstract

With the wide variety of challenges facing modern society in Japan and other parts of the world, such as the increase in lifestyle diseases, aging populations, and the spread of the COVID-19 pandemic since last year, the market for healthy foods is thought to be especially promising.
Meanwhile, in regions throughout Japan, there is an increasing trend of people involved in agriculture wanting to strengthen competitiveness by developing agricultural products and foods that help maintain or promote health. Nationally, there is also a growing trend to revitalize regional economies by promoting agriculture and food in order to expand exports in the future.
Given such background circumstances in society and market trends, since 2016 Shimadzu Corporation has been part-nering and collaborating with the National Agriculture and Food Research Organization for the purpose of generating innovation and contributing to society through food.
This article describes the background history that resulted in collaborating with the National Agriculture and Food Research Organization, the content of research work involved, and the future outlook and significance of the collaboration.
