Metabolic Analysis of Fermented Foods Using Triple Quadrupole LC-MS/MS

Abstract

Metabolomics is the comprehensive analysis of metabolites, the compounds living organisms produce to maintain biological function. Foods contain a wide range of metabolites such as amino acids, organic acids, and sugars, which are all known to contribute to the flavor, texture, and functionality of foods. When metabolomics techniques are applied to foods, this is known as food metabolomics. This article describes a case study in which triple quadrupole mass spectro-metry (LC-MS/MS) is used to perform a simultaneous analysis of hydrophilic metabolites in yogurt. The hydrophilic metabolites in various yogurts were analyzed using LC/MS/MS Methods Package for Primary Metabolites Ver. 3 (Shimadzu Corporation) and the differences between each yogurt were identified using Multi-omics Analysis Package (Shimadzu Corporation).
