Introduction

A gas chromatograph mass spectrometer (GCMS-TQ™8040 NX), an ultraviolet and visible spectrophotometer (UV-1280), a meat lipid measuring device, a microwave-drying moisture meter, and a visual evaluation were conducted on 61 beef cattle of Tottori Wagyu. Based on the 603 items, eMSTAT Solution™ performed statistical analyses such as U-test, ANOVA, PLS-DA, SVM, and random forest. In this application note, Wagyu brand indicators (e.g., by the pedigree or the farm) were explored using statistical analyses.
