Food Metabolomics Evaluation of Japanese Rice Wine Types Using LC/MS/MS

As an example of the increasingly well-known food metabolomics, we comprehensively analyzed the hydrophilic components of samples of five types of specially designated sake with a high-performance liquid chromatograph mass spectrometer (LC/MS/MS) and verified the characteristics of each sake type.
The results demonstrated that the characteristics of specially designated sake products can be identified by combining LCMS-8060 and multivariate analysis.
